This class is a bow to three super-classic Italian dishes,
Vegetarian Menu!
Polenta, Risotto and Pesto – and the traditional ways each is made.
Polenta with Fresh Tomato Sauce
Risoto Milanese with Zucchini and Chickpeas
Penne Pasta with Pesto Sauce and Vegetables
Arancini with Mushroom Ragu
We’ll make pesto from a mound of fresh basil, a whisper of garlic, and beautiful olive oil; polenta from cornmeal, salt and pepper; and brilliantly colored and fragrant saffron risotto that will make us cry with joy!
The key to this class is technique. You’ll practice the very few, but very important, steps to make each dish. There are no tricks or gimmicks here – only traditional techniques.
In addition to saffron risotto, pesto, and soft polenta, we will make two different vegetable broths from scratch, learn about additional variations of the risotto you can make at home; turn leftover risotto into Arancini (fried rice-cheese balls), and make a classic tomato sauce to enjoy with soft hot polenta.

While we try as hard as possible to accommodate each group of friends, students learn in teams of three or four, so there may be times where a member, or members of your group will join other teams. We promise you won’t be far and it’s also a great way to make new friends.
